Roasted New Potatoes - Recipe R&R

This recipe is from the Neely's as well, but it's for fingerling potatoes. Since they don't sell fingerling potatoes at my Walmart, and since Lord knows I don't like going to 50 million different stores, I used new potatoes.



I have a confession to make...please don't laugh...I have never in my life bought olive oil before. Boy, have I been missing out.

These turned out really good. Possibly had too much garlic, but still good.

Pot Roast (again!) - Recipe R&R

Last night I made Momma Neely's Pot Roast. I love watching the Neely's on Food Network. They're recipes are usually delicious.

This one was no exception. Easy to make and tasted delicious. I think a lot of the flavor depends on what kind of red wine you use. Although I personally used a $3 bottle of red wine and it tasted fabulous.

My rating - 8.

Sopapilla Cheesecake - Recipe R&R

Last weekend I made Real Mom Kitchen's Sopapilla Cheesecake for a get-together we had for my father-in-law's birthday.

It was so easy to make. And HOLY COW it was delicious! I think everyone at the party liked it.

I'd rate it a 9.5.

Peanut Butter Fudge - Recipe R&R

Last week sometime I made Julie's Fabulous Fudge from Happy To Be @ Home.

Sooooooooo simple to make.

This stuff is very, very rich.

I'd rate it a 7.

Cheeseburger Macaroni - Recipe R&R

I've been horrible about posting stuff on here. I'm so sorry. I have been cooking, just haven't been posting. I made The Cookbook Junkie's Cheeseburger Macaroni sometime last week.

Easy to make.

Pregnancy Update - Part Three

Well, I went to a specialist last week. They took my blood, checking for proteins. Don't have the results on that yet. I did have a sonogram that measured the width of the baby's neck. Everything was excellent. Heard the baby's heartbeat. The baby was moving around like crazy, even though I can't feel it. The sonographer said that movement was involuntary at this stage (I was 12 weeks pregnant at the time.)

I went to my regular ob this morning. After some discussion with him and the maternal fetal specialist, it was decided that I needed to go ahead and have the diagnostic mammogram. I am not at all looking forward to that. My appointment is this Monday and I am absolutely terrified at how much it might hurt. Being 13 weeks pregnant, you can imagine how sore and tender my breasts are anyway, and then to flatten one of them out like a pancake just makes me cringe. Wish me luck.

Enchiladas Verdes - Recipe R&R

Oh my goodness these were good. I got the recipe from my Taste of Home magazine. It was one of four recipes submitted by Joan Hallford of North Richland Hills, TX, which is just right up the road a piece from me.


These were pretty easy to make and all the ingredients were simple, which I love. (If you're at all familiar with El Rancho Grande restaurant in Fort Worth, the cheese sauce for these enchiladas reminded me of theirs - yummy!!)

Baked Rigatoni - Recipe R&R

Tonight I made Recipes of a Cheapskate's Baked Rigatoni.

It was pretty easy to throw together. Took a while for the sauce to come together, but I'll blame that on my ancient stove.

Kelly would rate this an 8.

Easy Key Lime Pie - Recipe R&R

A couple of days ago, Maddie and I made Controlling My Chaos's Easy Key Lime Pie.


I took this picture last night. Now there's only one slice left.

This pie was so easy to make, it's not even funny. The batter tasted a little wangy to me, so I added probably a tablespoon or so of sugar.

Kelly and I would both rate this a 9.

Taco Mac & Cheese - Recipe R&R

I made Taco Mac & Cheese last night. I found the recipe in an ad in my Taste of Home magazine which I got for free, by the way, via SheSpeaks.

Kelly and I would both rate this a 9.

Since I can't find the recipe anywhere, I'll go ahead and post it here:

Taco Mac & Cheese

1 lb. ground beef
1/3 cup salsa
1 1/2 tsp. chili powder
2 cups (8 oz.) elbow macaroni, uncooked (I used small shells)
1/2 lb. (8 oz.) Velveeta cheese, cut into cubes
2 3/4 cups water

Brown meat in large skillet. Drain. Stir in water, salsa & chili powder. Bring to boil. Stir in macaroni; cover. Reduce heat to medium-low; simmer 8-10 minutes or until water is almost absorbed. Add Velveeta; cook until melted, stirring frequently.

If desired, garnish with crushed tortilla chips, chopped tomato and/or chopped green onions.

Egg Noodle Lasagna - Recipe R&R

I made this sometime this week - can't remember when. I also can't remember if I asked Kelly to rate it or not, and if I did, what he rated it - my problem is a severe case of pregnancy brain!!

I got this recipe off of Allrecipes.com.

Sorry about the horrible picture, but I forgot to take a picture of it in a bowl or in the crockpot. Pregnancy brain strikes again!! This is a picture of the leftovers that were squished down in a plastic container.

I think I made something similar to this a while back. I think Kelly and I both agreed that we like this recipe better.

I'd rate this a 9.

Chili Mac - Recipe R&R

I made this sometime last week. I don't know why I've been slacking on posting things. I found the recipe over on Meal Planning Mommies.

I thought this would be kind of gross and that we wouldn't like it. I was wrong.

Kelly loved it and would rate it a 9.
I would rate it about a 7.

Chocolate Chip & Toffee Cookie Pizza - Recipe R&R

The other day I made Priscilla Bakes' Chocolate Chip & Toffee Cookie Pizza.


I couldn't find an 18-ounce tube of chocolate chip cookie dough, so I bought the next size down - which was like 16-oz. or something like that.

I spread it out on a pizza pan and it didn't even come close to covering the whole thing, so I decided to put it in a pie plate - not a very good idea. I kept having to smoosh it down so all the other ingredients would fit on top. You can tell by the picture I totally forgot to put the best part on - the toffee bits.

I'd rate this about a 6.

Good idea, poor execution on my part.

Cheesy Chicken Enchiladas - Recipe R&R

A few days ago I made Pennies On A Platter's Cheesy Chicken "Ben-chiladas". Mine turned out more like burritos.


I didn't care for these that much. Kelly liked them...of course. I used a rotisserie chicken that I bought at Walmart. If I ever made these again, I'd save about $5 and buy the canned chicken.
